BRIEF: In the Kitchen with Ken - Chicken nuggets

Jan 03, 2013 (Star-News - McClatchy-Tribune Information Services via COMTEX) -- I was trying to think of a way we could serve up some healthy chicken nuggets for Hudson and Kadie and I came up with this easy sweet and sour chicken nugget recipe. Keep your fingers crossed that the kids like this. If not I'm in big trouble.

The Chicken Nuggets 3-4 boneless chicken breasts Salt + pepper 1-cup corn meal 2 eggs, beaten Cut the chicken breast into small nuggets. Rinse your chicken breasts nuggets in water and then season with salt and pepper to taste. Dredge each piece in the egg wash and coat with the corn meal. Bake for 45 minutes and during the baking process you will need to turn the chicken every 15 minutes until crisp. Coat or dip the nuggets in the sweet and sour sauce, serve hot.

The sweet and sour sauce 1-cup brown sugar 4 tbs ketchup 1/2 cup apple cider vinegar 1 tbs soy sauce 3 cloves chopped garlic Mix all the ingredients together and pour over baked chicken or use as a dipping sauce.
