Le'ahi Concept Kitchen Opens at Waikiki Parc Hotel

Le'ahi Concept Kitchen features an impressive lineup of internationally acclaimed chefs who, for a limited time, will do a takeover of the kitchen and cook their native cuisine as part of Kapi`olani's new program, the Guslander Distinguished Visiting Global Chef series. The visiting chefs hail from the best of the Pacific Rim, traveling to Oahu from Japan, Korea, Thailand, China, and the Southern American Pacific Coast.

The visiting chefs will spend two full days in the classroom with students, teaching the concepts and history behind their respective cooking styles and talents, before bringing their skills to the kitchen. After several days of working hands-on in the kitchen with the visiting chefs, the students will create multiple dining concepts which will be implemented until the next guest chef arrives. Dishes from these special concept menus will be available to order in addition to the cuisine on the restaurant's standing menu. The visiting chefs will also host their own weekend-long fundraising pop-up events using their own menu interpretations, with proceeds supporting Kapi'olani Culinary Arts program development and student scholarships.

In addition to the Guslander Distinguished Visiting Global Chef series, Resident Chef Eddie Mafnas oversees the daily culinary operations of Le'ahi Concept Kitchen and has created a locally-focused menu that is available yearround. Chef Mafnas developed his passion for the culinary world and love for cooking while working at his family-owned bakery in Guam; since then, he has opened multiple restaurants across Asia and Africa. Chef Mafnas is also the owner of Mafnas Catering, which has given him the opportunity to cook for several A-list celebrities.



The daily menu at Le'ahi Concept Kitchen brings guests on a gastronomic journey infused with local flavors and Japanese influence. Le'ahi at The Parc offers an array of small plates, including Chicken Kelaguen, a Chamoro style marinated chicken topped with Hawaiian chili, freshly grated coconut, red rice, flour titiyas, and finadene; and Spicy Ahi Wonton Tacos, prepared with local avocado, cherry tomato, and a fresh unagi sauce. The menu of large plates includes Kona Coffee Rubbed Prime Rib Eye Steak, seasoned with Keawe smoked salt and served with Aloun Farms baby carrots, ulu mash, and peppercorn demi; and a Fresh Island Catch, a ginger and green onion-crusted daily catch served over ewa corn & Okinawan sweet potato succotash glazed with a miso sesame vinaigrette.

In addition to the chef series and rotating concept menus, guests can also look forward to a variety of amenities including the opportunity to bring their own wine, which for hotel guests, can be sourced from a selection of fine wines available for purchase in guestrooms as well as complimentary valet parking. Dining experiences at Le'ahi at The Parc are complete with musical entertainment by a live pianist. The concept kitchen will welcome locals and hotel guests for dinner, nightly from 5:00 p.m. until 10:00 p.m. with the last seating at 9:30 p.m.
