BRIEF: Healthy Cooking: Lightening up macaroni and cheese


Feb 20, 2013 (Winston-Salem Journal - McClatchy-Tribune Information Services via COMTEX) -- Some fans of Paula Deen have been after her to offer healthy versions of her Southern comfort-food dishes. Well, one fan -- her son Bobby Deen -- has taken matters into his own hands.



Bobby and his brother. Jamie, of course, are celebrity cooks in their own right, having worked in mom's restaurant for years, and even been hosts of their own Food Network show.

Bobby Deen's latest show is "Not My Mama's Meals" and along the same lines comes his new book, "From Mama's Table to Mine" (Ballantine Books, $22).


Deen first started eating lighter a few years ago when trying to shed 25 pounds. Deen still wants to eat all the same favorite foods he grew up with, so he tweaks the recipes to remove a significant amount of fat and calories.

Deen chose Melissa Clark, a cookbook author and contributor to The New York Times, to help with the recipes.

Below he tackles macaroni and cheese, a comfort-food dish of the first order.

This recipe, he says, has just 7 grams of fat and 293 calories in one serving, compared to 30 grams of fat and 584 calories in typical full-fat versions.
