There is no room for variation when it comes to producing food on a large scale. Consistency is the most important factor for consumer happiness and safety. So, when things start going in the wrong direction during manufacturing, it is no time to be questioning decisions related to recipes.



Food producers therefore need to act more like scientists than chefs—no matter what is being created. If a piece of candy is too sweet, or if a potato chip is too salty, then production must be ceased immediately.
